Light veggie salad, perfect for summer. Ingredients:
3 cups asparagus, sliced |
1 cups tomato, diced |
2 tablespoons olive oil |
2 tablespoons lemon juice |
1/2 cup reduced fat feta |
Directions:
1. Blanch asparagus, cool. Mix with lemon juice. Combine with tomato, olive oil and feta. |
