A modified version of a weight watchers recipe-so good you'll want to make extras for the next day! Ingredients:
1 bunch asparagus |
1 pint grape tomatoes |
1/4-1/2 cup balsamic vinegar |
kosher salt |
Directions:
1. Cut up asparagus (you can leave whole for prettier presentation!) Discard woody ends. 2. Steam or microwave for 2-3 minutes, keeping it crisp! 3. Rinse in cold water. 4. Toss with tomatoes. 5. Dress with vinegar; sprinkle with salt. Enjoy! |
