Asparagus Salad With Raspberry Vinaigrette |

This is an awesome asparagus dish. It's light, herby very tasty and goes good with just about anything. Hope you like it as much as I do. Ingredients:
2 pounds fresh asparagus washed well and cut into pieces |
1 red pepper seeded and cut into pieces |
1 red onion chopped |
1/2 cup raspberry vinegar |
1/2 cup water |
1 tablespoon honey |
1 teaspoon parsley |
Directions:
1. Steam asparagus pieces for 2 minutes then plunge into cold water to stop cooking. 2. Drain well. 3. Put asparagus, red pepper and onion into a plastic bowl with cover. 4. Blend vinegar, water, honey and parsley in a separate bowl then pour over vegetables. 5. Adjust seasonings if desired. 6. Stir cover and refrigerate for at least 24 hours. 7. Stir occasionally. 8. Serve cold as a side salad. |
