I got this recipe idea out of a magazine, then have added a few of my own things in. It's a great summer time salad! Ingredients:
2 cups fresh asparagus (chopped) |
1 cup purple onion (sliced) |
1 cup artichoke heart (chopped) |
1/2 cup black olives (sliced) |
1 cup tomato (chopped) |
5 ounces feta (crumbled) |
1/3 cup fresh cilantro |
1/3 cup fresh italian parsley |
3 tablespoons fresh dill |
1/2 cup mayonnaise |
4 tablespoons dijon mustard |
2 tablespoons white balsamic vinegar |
1 tablespoon sea salt |
Directions:
1. Dressing: Mix Cilantro, Italian Parsley, Dill, Mayonnaise, Dijon Mustard, White Balsamic Vinegar & Sea Salt. 2. Boil Asparagus for about 4 min, then rinse with cold water and let cool. 3. In a large bowl mix Asparagus, Purple Onion, Artichoke Hearts, Black Olives, Tomatoes & Feta. Then add your dressing and enjoy! |
