A creamy good Risotto. This is a recipe of a friend of mine. She really likes it...I have never made this..... Ingredients:
1 cup arborio rice |
4-5 cups chicken stock |
1 tablespoons onion, diced |
2 teaspoons garlic, chopped |
1 tablespoon olive oil |
1/2 tablespoon butter, unsalted |
3/4 cup fresh asparagus, sliced |
2-4 tablespoons parmesan, grated |
salt and pepper to taste |
Directions:
1. In a heavy saucepan heat the butter and olive oil over medium heat. 2. Saute the onion for about two minutes. 3. Add the garlic and saute until aroma is apparent. 4. Add the Arborio rice and cook for about two minutes until the rice is fully coated by the oil and butter. 5. Add about one cup of the stock and stir frequently until it is fully absorbed. 6. Repeat this step until the rice is cooked thoroughly and creamy. 7. Remove from heat and stir in asparagus and parmesan. 8. Adjust seasonings with salt and pepper. |
