Easy Low Cal Frittata
Ingredients:
1 tbsp olive oil
2 cups chopped asparagus
4 eggs
1 cup egg white
1/4 cup milk, skimmed
1/4 tsp salt
1/4 tsp pepper
1 cup ricotta cheese, low fat
3 green onions, chopped
1/2 cup grated parmesan cheese
Directions:
1. In a 9 or 10 nonstick ovenproof skillet, heat oil over medium heat, fry asparagus until softened, about 5 min.
2. In large bowl stir together eggs, milk, salt and pepper, whisk in ricotta and green onions.Pour into skillet and stir to combine.
3. Sprinkle with Parmesan cheese, cook over medium heat until bottom and sides are set, about 10 min. Broil until golden and set on top about, 3 min.
4. Cut into wedges
