Different spin on asparagus Ingredients:
1 lb. fresh asparagus |
1/2 cup freshly grated parmeasan cheese |
1/2 cup olive oil |
1/ cup pine nuts |
1 garlic clove |
1 tbs. lemon juice |
3/4 tsp. salt |
Directions:
1. Snap off and discard tough ends of asparagus 2. Cook asparagus in boling water covered 3-4 minutes ti ll crisp tender 3. Dain 4. Plunge sparagus into ice water to stop cooking process 5. drain, coarsely chop asparagus 6. Process aparagus , cheese, and remaining ingredients in food processor 30 secons to 1 minute till smooth 7. Scrape down side as needed. 8. May toss ith cooked pasta your choice 9. or spread on Crostini topped with chopped tomatoe and bacon |
