This quiche comes from and just sounds so flavorful. I'll be trying this one crustless Ingredients:
1 tablespoon butter |
1 leek (white/light green parts), washed well, halved and thinly sliced |
coarse salt and ground pepper to taste |
1 pound asparagus, tough ends removed and thinly sliced on the diagonal |
4 large eggs |
1 1/4 cup half and half |
ground nutmeg |
you favorite 9 pie crust |
1 cup gruyere cheese, shredded |
Directions:
1. Preheat oven to 350 degrees F with rack in lowest position. 2. In large skillet melt butter over medium heat. 3. Add leek and asparagus and season with salt and pepper. 4. Cook, stirring occasionally, until asparagus is crisp-tender, 6 to 8 minutes. 5. Let cool. 6. In large bowl whisk together eggs, half and half, 1/2 teaspoon salt, teaspoon pepper and a pinch of nutmeg. 7. Place pie crust on a rimmed baking sheet. 8. Sprinkle with cheese. 9. Top with asparagus mixture. 10. Pour egg mixture on top. 11. Bake until center of quiche is just set, 50 to 60 minutes, rotating sheet halfway through baking. 12. Let stand for 15 minutes before serving. |
