Guac made w/ asparagus instead of avocado. I use my own home-made salsa whenever possible! Also, you could sub regular onions for green onions if you want. Ingredients:
24 spears asparagus, chopped |
1/2 cup salsa |
1 tbsp cilantro |
2 cloves garlic |
4 green onions, sliced |
Directions:
1. Place asparagus in pot with water to cover. Boil and cook 5 minutes until tender but firm. Drain, and rinse with cold water. 2. Place asparagus, salsa, cilantro, garlic and green onions in food processor or blender, and process to desired consistency. Refrigerate for 1 hour or until chilled before serving. |
