2 egg whites , beaten |
2 eggs , beaten |
2 c tender asparagus , trimmed |
2 tbsp chives , chopped |
1 handful shallots , thinly sliced |
pinch of salt |
2 tsp white pepper |
2 tbsp parmesan cheese |
Directions:
1. Stir fry asparagus for 2mins in olive oil . Set aside . 2. Stir fry shallots until soft . 3. Add the asparagus . 4. Add the chives , salt and pepper to the eggs and pour over . 5. Once start to set , pour the egg whites , sprinkle the cheese and transfer it to the oven . 6. Grill it until set . |
