Asparagus Bundles With Prosciuto Wgoat Cheese |

You can say 'eat your veggies' all you want but if they look good, smell good and taste good;half the battle is won. A great idea from Reynold's Wrap. Ingredients:
pound fresh asparagus, trimmed |
thin slices prosciutto, cut in 1-inch wide strips |
tablespoon olive oil |
teaspoon salt |
teaspoon freshly ground black pepper |
tablespoons chopped roasted red peppers |
cup crumbled goat or feta cheese |
Directions:
1. PREHEAT oven to 450°F. Line a 10 1/2x15 1/2x1-inch baking pan with Reynolds Wrap Heavy Duty Aluminum Foil; set aside. 2. WRAP asparagus spears in bundles of 3 or 4 with a strip of proscuitto around middle. 3. Place bundles in a single layer in foil-lined pan. 4. Drizzle olive oil over asparagus bundles. 5. Sprinkle with salt and pepper. 6. Top with roasted red peppers. 7. Bake 6 to 8 minutes or until asparagus is crisp tender. Sprinkle with cheese. 8. CONTINUE BAKING 5 minutes or until cheese is softened and heated through. 9. REYNOLDS KITCHENS TIP: To line pan, flip pan upside down. Press a sheet of foil around pan. Remove foil. Flip pan upright and drop foil inside. Crimp edges to rim of pan. |
