Very delightful and very tasty asparagus dish that goes great with everything. Enjoy Ingredients:
1 pound fresh asparagus spears |
3 tablespoons pine nuts |
1/4 cup olive oil |
1 tablespoon fresh lemon juice |
1 clove garlic crushed |
1/2 teaspoon salt |
1/2 teaspoon dried whole basil |
1/2 teaspoon dried whole oregano |
1 teaspoon freshly ground black pepper |
Directions:
1. Snap off tough ends of asparagus then remove scales from stalks with vegetable peeler 2. Place spears in a steaming rack over boiling water then cover and steam 5 minutes. 3. Transfer to a serving platter. 4. Sauté pine nuts in a small skillet over medium heat for 3 minutes then set aside. 5. Combine olive oil and remaining ingredients in saucepan then stir with wire whisk to blend. 6. Cook over medium heat 3 minutes or until thoroughly heated stirring constantly. 7. Pour over asparagus then sprinkle with pine nuts. 8. Let stand to room temperature before serving. |
