Asparagus And Red Potato Salad |

When asparagus is in season I like to try it several different ways. This was a very tasty cold salad. Ingredients:
3 cups asparagus cut into 2 pieces, steamed |
about 15 small red skin potatoes, boiled |
1 can artichoke hearts, drained |
1/3 cup blue cheese (more or less to taste) |
good season's garlic and herb freshly prepared dressing |
dressing prepared with good olive oil and red wine vinegar |
chopped fresh flat leaf parsley and chives |
fresh ground pepper |
Directions:
1. cut asparagus and steam to desired tenderness, I do 3 minutes 2. plunge into ice bath to stop cooking 3. boil potatoes and set aside to cool 4. drain canned artichokes 5. chop parsley and chives 6. crumble blue cheese 7. When potatoes have cooled drain asparagus, cut potatoes in 1/2 8. put all above ingredients into salad bowl 9. prepare salad dressing 10. add desired amount of dressing and pepper to salad and mix well |
