Super Foods Cookbook Ingredients:
1 cup water |
2/3 cup bulgur |
1/3 cup thinly sliced pimiento |
1/4 cup vinegar |
1/4 cup chicken stock |
2 teaspoons olive oil |
1 tablespoon snipped chives |
1 teaspoon dried thyme |
24 stalks asparagus, trimmed |
Directions:
1. In a 1 quart saucepan, bring the water to a boil. Add the bulgur. 2. Cover and let stand for 15 minutes or until the liquid has been absorbed. Fluff with a fork. 3. In a large bowl combine the pimientos, vinegar, stock, oil, chives and thyme. Add the bulgur. 4. Blanch the asparagus in boiling water for 4 minutes. Slice diagonally into 2 inch sections. Add to the bulgur and mix well. |
