Asparagus And Brie Soup

Delicious cream of asparagus soup with white wine and brie cheese.
Ingredients:
1tbs olive oil
2tbs butter
1c onion,rough chop
1c leeeks,white only and rough chop
1/2lb potatoes,peeled and rough chop
2tbs kosher salt
1/8tsp nutmeg
1tbs fresh dill,rough chop
2tsp fresh thyme leaves
2tsp black pepper
3/4c white wine
3c chicken stock
3c whipping cream(or half and half)
3/8lb brie,peeled and diced
11/4lbs asparagus,white bottoms removed and slice crosswise in small pieces
Directions:
1. Heat butter in oil till butter froths. Add onion,leeks,potato and salt and sweat over med. heat until onions begin to turn translucent. Do not let vegetables brown. Add herbs and spices and stir well.
2. Add chicken stock and cream and bring to boil. Reduce heat,simmer for 10 mins.. Add brie and asparagus and simmer until brie is melted and potatoes are very soft. Puree in small batches and put through a sieve before servoing or storing(I use emersion blender right in the pot).
