It's turkey leftover time- this will help you feel healthy the next day
Ingredients:
2 cups shredded cabbage
3 cups shredded cooked turkey
1 cup red bell pepper, strips
1/2 cup thinly sliced red onion
1/2 cup shredded basil or 1/2 cup cilantro
1/4 cup sliced scallion
1 tablespoon dry roasted peanuts
1/4 cup rice vinegar
1/4 cup vegetable broth
1 tablespoon soy sauce
2 teaspoons minced ginger
2 teaspoons fresh lime juice
1 teaspoon oil
1 teaspoon sesame oil
1/2 teaspoon salt
1/2 teaspoon sugar
1 garlic clove, minced
1 serrano chili
Directions:
1. To make dressing put ingredients in a blender, process until smooth.
2. Put all salad ingredients in a large bowl, toss with dressing serve.
