a nice stew that is low in calories. Ingredients:
5 cups vegetable stock |
1 small onion, diced |
2 garlic cloves, minced |
2 tablespoons soy sauce |
1/4 cup spinach, chopped |
1 cup broccoli floret |
1 cup carrot, diced |
1 cup mushroom, sliced |
1/2 cup peas |
1/2 cup water chestnut, chopped |
1/2 cup soba noodles, broken |
1/2 cup tofu, cubed |
Directions:
1. brown onions and garlic in large pot. 2. Add stock and soy sauce and bring to a boil. 3. Add remaining vegetables and bring to a simmer. |
