Another take on coleslaw with out mayonaise. This is great the next day, the veggies are still crunchy. Ingredients:
2 cups napa cabbage shredded |
2 cups carrots julianned |
1 cup zuchinni julianned |
1 cup red bell pepper julianned |
1/2 cup cucumber julianned |
1 medium shallot or red onion halved and sliced thinly |
1/2 cup roughly chopped cilantro |
dressing |
1/3 cup rice wine vinegar |
3 tbsp white balsamic vinegar |
1 tbsp siricha sauce, or any asian style hot sauce |
1/8 tsp of white pepper |
1 tsp salt |
1/2 tsp sesame oil |
3/4 cup vegtable oil |
Directions:
1. Combine dressing in a small bowl and set aside. Tast for salt. 2. Shred and juliane vegtables into a large salad bowl. Toss. Pour dressing over top and toss, taste for salt and pepper. |
