This combines my love for salmon and burgers. Good served with a bok choy salad or sesame noodle salad. Ingredients:
1 lb salmon fillet, skin removed and picked over for bones |
1 large egg |
1 tablespoon soy sauce or 1 tablespoon low sodium soy sauce (if you are salt-sensitive) |
1 tablespoon minced fresh ginger |
1/2 cup panko breadcrumbs |
1 -2 teaspoon chopped chives |
2 tablespoons chopped red onions |
1 tablespoon fresh lemon juice |
sea salt, to taste |
pepper, to taste |
1/4 cup finely chopped red onion |
2 cloves garlic, minced |
1 tablespoon minced fresh ginger |
1 tablespoon fresh lemon juice |
1/4 cup soy sauce or 1/4 cup low sodium soy sauce |
1/2 teaspoon sugar |
Directions:
1. To make Ginger Lemon Sauce: add all the ingredients to the container of a food processor; pulse until mixture is smooth; set aside. 2. To make burgers: cut the salmon fillet into 1/2 inch cubes; set aside. 3. In a large bowl, combine the egg, soy sauce, and ginger using a whisk. 4. Add in the salmon cubes, panko, chives, onion, and lemon juice; season with salt and pepper to taste. 5. Mix, using a wooden spoon, until the ingredients are evenly distributed. 6. Take mixture and shape into 4 flat patties. 7. Lightly coat each patty with vegetable oil cooking spray. 8. Grill over medium heat for about 5 minutes on each side or until done; turn carefully to prevent breaking. 9. Serve burgers on sesame rolls and top with Ginger Lemon Sauce. 10. Use extra sauce for dipping if desired. |
