Ingredients:
2 1/2 tablespoons cider vinegar |
2 1/2 tablespoons sugar |
2 tablespoons low-sodium soy sauce |
1 teaspoon grated fresh ginger |
1/4 cup unsalted peanuts, toasted |
1 1/2 cups shredded bok choy |
1 1/4 cups thinly sliced red cabbage |
Directions:
1. Combine first 4 ingredients in a small bowl; stir well with a whisk. Set aside. 2. Combine peanuts, bok choy, and cabbage in a medium bowl; add dressing, and toss gently to coat. Serve with a slotted spoon. |
