Asian Noodles (My Sister's Recipe)

We are staying in my sister's home right now although she's not here. She left the sauce, noodles and recipe for this dish for us along with brief instructions to go out and buy some meat and bits to go in it to make a quick meal. It's really delicious. I have converted the mls to teaspoons for the metrically challenged ;-) Use half the sauce, the rest keeps well in the fridge til next time.
Ingredients:
1/2 cup light soy sauce
3 teaspoons dark soy sauce
3 teaspoons oyster sauce
3 teaspoons fish sauce
6 teaspoons sugar
1 teaspoon white pepper
400 g hokkien noodles
8 snow peas, shredded
1 cup broccoli floret, cut small
3 tablespoons vegetable oil
300 g pork fillets, sliced thinly
1 garlic clove
2 teaspoons chili paste
1 beaten egg
1 cup bean sprouts
2 teaspoons snipped chives
Directions:
1. Sauce:.
2. Mix all ingredients, set aside. You'll need half-the remainder stores well in the fridge.
3. Noodles:.
4. In a bowl, pour boiling water over the Hokkien noodles, broccoli and shredded snow peas. Allow to stand for 3 minutes, drain.
5. Heat a wok as high as possible, add the oil and stir fry the pork slices and garlic until fragrant (2-3 minutes at domestic temps).
6. Add the noodles, broccoli and snow peas and toss for a few minutes.
7. Add the chili paste and half the sauce and toss a couple more minutes, then add the beaten egg continuing to toss.
8. Lastly add the bean shoots and chives, toss briefly and serve.
