Asian Noodle Salad With Toasted Sesame Dressing |

Very yummy. My toddler was suspicious at first but now she loves it. From Feeding the Whole Family Ingredients:
1 (8 ounce) package soba noodles |
1/4 cup chopped cilantro leaf |
1/4 cup toasted sesame seeds |
1 (14 ounce) package tofu, firm |
2 tablespoons toasted sesame oil |
3 tablespoons tamari |
3 tablespoons balsamic vinegar |
1 tablespoon hot pepper oil (skip this for the tots) |
chopped red cabbage |
finely slice radish |
sliced scallion |
Directions:
1. Make the dressing in a small bowl by combining all ingredients and whisking together. 2. Cube the tofu and marinade it in the dressing. 3. Cook the soba noodles according to package instructions. 4. Place drained noodles in large bowl and add dressing with tofu, cilantro, and sesame seeds. 5. Add any additional vegetables and toss gently and thoroughly. |
