Asian Marinated Carrots & Edamame |

I had a yen to try my hand at some beef lo mein. I wanted the vegatables to stand out a bit so I thought giving them a nice rest in some oriental marinade would do the trick. This quick stir fry side dish can stand alone as well as be an ingredient in other recipes. Ingredients:
1 tbsp low sodium soy sauce |
1 tbsp rice vinegar |
1 tbsp sesame oil |
1/2 tsp ground fresh ginger |
1/2 c edamame, shelled |
1/ c jullienned carrots |
1 tbsp cooking oil |
Directions:
1. Mix up the marinade and toss the vegetables in it until well covered. Let it marinate for at least four hours. Turn the veggies periodically - give the covered dish a good shake. 2. To cook: 3. Heat the cooking oil, toss in the veggies and any sauce in the dish. 4. I used a chili infused stir-fry oil because I wanted a bit of bit. 5. Toss until carrots are bit softened and the edamame turn a bright green. They should be crisp-tender - not mushy. |
