Awesome salad that is perfect for the warm weather, this is really easy to fix and extremely healthy. I modified it from a Men's Health magazine. Ingredients:
1 (15 ounce) can mandarin oranges, drained |
1 (16 ounce) bag mixed salad greens, of your choice |
2 cups chow mein noodles |
1 cup sliced almonds |
2 cups cooked soybeans |
2 cups pre-cooked sliced chicken breasts |
Directions:
1. In sauce pan heat water to boiling and add in frozen soy beans, cook as directed on package. While soybeans are cooking toss together remaining ingredients. Run soy beans under cold water and then add to salad mixture. Toss until well combined and then serve with your favorite dressing. |
