Asian Grilled Pork Tenderloin With Pineapple |

Adapted from a recipe by The Pork Board on . Ingredients:
2 lbs pork tenderloin |
1 (6 ounce) can pineapple juice |
3 tablespoons soy sauce |
2 tablespoons minced fresh garlic |
2 tablespoons minced fresh ginger |
1 1/2 teaspoons coarse salt |
1 teaspoon ground cumin |
1 teaspoon chili powder |
1/2 teaspoon ground black pepper |
2 cups peeled and cubed fresh pineapple (1-inch pieces) |
Directions:
1. Combine everything except pineapple in large zip top bag. Press out as much air as possible and seal bag. Marinate in refrigerator 1 to 24 hours. 2. Preheat grill to medium-hot. Drain marinade. Place tenderloins on grill and cook 10 minutes on each side, or to internal temperature of 160°. 3. Skewer pineapple. Add to grill last 6 minutes, turning halfway through. 4. Slice pork 1/2 thick and serve with grilled pineapple. |
