A slight variation of the cucumber salad my Japanese grandma used to make. The longer they marinate, the more the cucumbers soak up the flavors, yet stay super crunchy! Ingredients:
2 average sized english cucumbers |
1 tsp salt |
2 tbsp lemon juice |
3 tbsp soy sauce |
3 tbsp white vinegar |
2 1/2 to 3 tbsp sugar |
Directions:
1. Halve the cucumbers length wise 2. Slice very thinly 3. Place cucumbers in medium bowl, add salt 4. Let sit 10 minutes. Drain. 5. Add remaining ingredients 6. Stir until sugar is dissolved 7. Serve immediately or chill to serve later! |
