An refreshing summer salad. I was bummed when McDonald's took their Asian chicken salad off the menu, so I made my own. You can alter it to your own tastes or needs. Serve with a light asian salad dressing. I like Newman's own Lighten Up Asian Sesame Ginger. You can also substitute the baby spinach for mesclun mix or romaine lettuce...whatever you want. Ingredients:
2 lbs boneless skinless chicken breast |
8 cups baby spinach |
10 oz. mandarin oranges |
2 cups shelled edamame |
1 cucumber |
1 red pepper |
1 green pepper |
1 cup slivered almonds |
10 oz. shredded red cabbage |
10 oz. shredded carrots |
1 red onion |
Directions:
1. Grill the chicken in a grill pan and slice into 1/2 inch slices. Slice the onion into rings, and the peppers into thin strips. Drain the mandarin oranges. 2.
