Asian Chicken Noodles With Vegetables |

Another great recipe from my Asian cookbook. Ingredients:
cooking spray |
3/4 lb boneless skinless chicken breast, cut into strips |
1/4 teaspoon ground ginger |
salt & pepper |
2 cups water |
1 (3 ounce) package chicken-flavored ramen noodles |
0.5 (16 ounce) package frozen mixed vegetables (broccoli, carrots, & water chestnuts) |
1/4 cup stir-fry sauce |
Directions:
1. Note: Reserve seasoning packet from the ramen noodles. 2. Spray a skillet with cooking spray & turn on medium-high heat. Sprinkle the chicken strips with ground ginger, salt & pepper then cook until no longer pink, around 8 minutes. 3. Meanwhile, bring the water to boil in a large pot. Add the vegetables & noodles then cook for 3 minutes. 4. Drain & place back on the heat. Stir in the chicken, stir-fry sauce, & seasoning packet, heat until warm. |
