Found in Everyday Food. I haven't made it yet but it looked and sounded good. I might add a touch of honey being I like my dressing a little sweet.
Ingredients:
3/4 lb carrot, peeled and shaved with a vegetable peeler
4 scallions, thinly sliced
2 tablespoons rice vinegar
1 tablespoon vegetable oil
1 tablespoon sesame seeds, toasted
1/8 teaspoon lime zest
1 tablespoon fresh lime juice
salt and pepper
Directions:
1. In a bowl combine carrots, scallions, vinegar, oil, sesame seeds, lime zest and juice. Season with salt and pepper to taste. Toss to combine.
