Found in Everyday Food. I haven't made it yet but it looked and sounded good. I might add a touch of honey being I like my dressing a little sweet. Ingredients:
3/4 lb carrot, peeled and shaved with a vegetable peeler |
4 scallions, thinly sliced |
2 tablespoons rice vinegar |
1 tablespoon vegetable oil |
1 tablespoon sesame seeds, toasted |
1/8 teaspoon lime zest |
1 tablespoon fresh lime juice |
salt and pepper |
Directions:
1. In a bowl combine carrots, scallions, vinegar, oil, sesame seeds, lime zest and juice. Season with salt and pepper to taste. Toss to combine. |
