Vegetarian broccoli salad that's terrific which I made for the vegan relatives. If you want to add meat another time, the standard is usually cooked crumbled bacon which would go nicely Ingredients:
2 large heads of broccoli |
1 cup dark raisins |
1 /2 cup toasted sunflower seeds |
soy sauce to taste |
oriental sweet cooking rice wine to taste ( aji- mirin ) |
oriental seseme seed oil to taste |
1 tsp sugar |
1 tsp green curry paste or to your liking |
Directions:
1. Use broccoli florets ( save stems for another use if you prefer ) and cook tender in water with some salt and a few slices of lemon till crisp tender and still green. 2. Drain and rinse with cold water and drain again. 3. Place florets ( cut if too large ) into a bowl with the sunflower seeds and raisins. 4. Now to taste ,add splashes of sweet cooking rice wine, seseme seed oil, soy sauce, and 1 tsp sugar and curry paste to taste. 5. This may be served immediately or well chilled. 6. The salad has a nice combination of sweet and heat and nutty flavor from the sunflower seeds, |
