Try this tasty oriental chicken dish, made with minimum fuss but with maximum taste. Perfect meal for one but easily scaled up for more! Ingredients:
1 skinless chicken breast |
1/2 tablespoon soy sauce |
1/4 tablespoon rice vinegar |
1/2 onion, sliced |
1/2 bell pepper, sliced |
1 small carrot, sliced |
2 ounces baby corn |
5 water chestnuts, sliced |
Directions:
1. Preheat oven to 350°F. 2. Put the chicken in a baking dish; pour over the soy sauce and vinegar, and then top with the vegetables. 3. Bake for about 40 minutes or until the chicken is cooked through and no longer pink in the middle. 4. Cover with foil half-way through the cooking time. |
