Asian Apple Marinade for Beef |

This is another great marinade for beef - this came from Martha!! Ingredients:
1 tablespoon extra virgin olive oil |
12 granny smith apples, cored and cubed |
1/4 cup lemongrass, chopped, from 3 stalks |
3 garlic cloves, minced |
1 inch fresh ginger |
1 fresh red finger chili pepper, thinly slced |
3 whole star anise |
1/2 cup water |
1/4 cup tamari or 1/4 cup regular soy sauce |
3 tablespoons apple juice |
1 tablespoon rice wine vinegar, unseasoned |
1 tablespoon light brown sugar |
Directions:
1. Heat oil in a medium saucepan over medium heat. Add apple, lemonngrass, garlic, ginger, chili, and star anise. Cook, stirring for 5 minutes. 2. Add the remaining ingredients, and bring to a simmer. Remove from eat and let cool for 5 minutes before use. |
