From Company's Coming - Cooking for the Seasons Ingredients:
400 ml refried beans |
35 g taco seasoning |
113 ml diced green chilies, with liquid |
2 ripe avocados, peeled, pitted and mashed |
1 tablespoon lime juice |
3 tablespoons salsa |
1/2 cup light sour cream |
125 g light cream cheese, softened |
1 teaspoon lime juice |
1 cup grated cheese |
2 medium tomatoes, diced |
2 green onions, chopped |
Directions:
1. Combine beans, taco mix and chilies in medium bowl. Tun into ungreased 10 inch glass dish. Smooth top. 2. Combine avocado, first amount of lime juice, and salso in small bowl. Spread over bean layer. 3. Beat sour cream, cream cheese, and second amount of lime juice together in a small bowl. Spread over avocado layer. 4. Sprinkle with cheese, tomatoes, and green onions. Chill until ready to serve. 5. Use as a dip for tortilla chips. |
