GRILLED ASPARUGS WITH FRIED EGG ON TOP.... Ingredients:
20 fresh asparagus spears |
2 tablespoons extra virgin olive oil |
4 extra large free range eggs |
2 large ripe beefsteak tomatoes sliced |
1 baguette sliced diagonally |
salt to taste |
coarse frind black pepper |
garlic olive oil mayo |
Directions:
1. put griddle on high, splash one tablespppn of olive oil, place asparagus and cook for 2-3 minutes till wilted. heat remaining olivedoil in a frying pan and fry eggs to your liking, in 4 plates devide the sliced tomatoes, put 5 asparagus in each plate. put few sliced of the baguettes and place an egg on top...put some of the garlic mayo on top of the asparagus and sprinkle with salt and pepper...... 2.
