Arugula with Sun-Dried Tomatoes |

Toss fresh arugula leaves with our homemade dressing and sun-dried tomatoes for an easy and flavorful side dish that pairs well with most entrees. Ingredients:
8 sun-dried tomatoes (packed without oil) |
1/2 cup hot water |
1/3 cup fat-free french dressing |
1 tablespoon balsamic vinegar |
1 tablespoon unsweetened apple juice |
1 teaspoon dijon mustard |
1/8 teaspoon pepper |
4 cups torn arugula |
1/4 cup freshly grated parmesan cheese |
Directions:
1. Combine tomatoes and hot water in a small bowl; let stand 10 minutes. Drain and cut tomatoes into quarters. 2. Combine dressing and next 4 ingredients in a small bowl, stirring well. Combine tomato and arugula in a bowl, tossing lightly. Drizzle dressing mixture over arugula mixture. Sprinkle with Parmesan cheese. |
