2 cups baby arugula |
1/2 cup flat leaf parsley |
1/2 small red onion, halved |
1 garlic clove, quartered |
4 ounces soft fresh goat cheese |
1 teaspoon lemon zest |
2 tablespoons fresh lemon juice |
2 tablespoons olive oil |
1/2 teaspoon salt |
black pepper |
Directions:
1. In a food processor, pulse arugula, parsley, red onion and garlic until finely chopped, about 10 pulses. 2. Add goat cheese, lemon zest and juice, olive oil, salt and pepper. Process until blended. |
