Arugula (Rocket) and Parmesan Salad |

From the Sopranos Family Cookbook Ingredients:
1 bunch arugula, washed and dried |
2 tablespoons extra virgin olive oil |
2 teaspoons balsamic vinegar |
salt and pepper |
1 ounce parmigiano-reggiano cheese |
Directions:
1. Cut off the arugula stems. 2. Tear the leaves into bite sized pieces. 3. In a large bowl, whisk together the oil, vinegar, and salt and pepper to taste. 4. Add the arugula and toss well. 5. Pile the salad on two plates. 6. With a vegetable peeler, shave the cheese over the salad. |
