Arugula Radicchio Etc Salad |

If elegant could be a flavor, then it would apply to this salad. You can mix and match the greens, but the dressing is absolutely scrumptious! Ingredients:
1 cup roasted walnuts, warm |
juice of one orange |
1/2 cup rice wine vinegar |
salt and pepper |
1/2 cup walnut oil |
1/4 cup extras-virgin olive oil |
1/2 pound arugula, cleaned and stems removed |
1/2 head of radicchio, julienned |
butter (boston) lettuce |
romaine lettuce |
1/2 pound maytag blue cheese |
2 tablespoons cracked black pepper |
mandarin oranges |
Directions:
1. Dressing: 2. Place the warm walnuts in a mixing bowl. 3. Add the orange juice and rice wine vinegar. 4. Season with salt and pepper. 5. Allow to stand 10 minutes for flavors to infuse together. 6. Whisk in the oils. 7. Reseason if needed. 8. Lettuces: 9. In a mixing bowl, combine all the greens together and toss with the 10. walnut oil. 11. Mix arugula and lettuces together. 12. Mound on individual plates and sprinkle the Maytag cheese and walnuts on the greens. 13. Garnish with the cracked black pepper. 14. This dressing is soooo good! |
