If you like Arugula, you'll love this! Ingredients:
vinaigrette |
3 oz extra virgin olive oil |
1 oz white wine vinegar |
salt to taste |
salad |
6 oz crumbled gorgonzola |
6 cups arugula |
1/2 cup toasted walnuts |
1 ripe pear, cored, sliced thin |
Directions:
1. Combine the olive oil & vinegar and whisk together. Salt to taste. 2. In a salad bowl, toss the vinaigrette with the arugula, half of the walnuts & pear. Add the Gorgonzola and toss. Arrange on plate, top with remaining walnuts and pear slices. |
