Arugula, Grapefruit, and Avocado Salad |

This salad gets a double hit of citrus flavor: the grapefruit segments adorn the greens while their juice gets mixed into the dressing. Ingredients:
2 fruit (3-3/4 dia) grapefruit |
2 tbsp olive oil |
0.75 tsp sea salt |
1 avocado, ns as to florida or california avocados |
0.5 medium raw onion red |
6 cup arugula |
Directions:
1. Remove skin and pith from grapefruits. Save the juice in a bowl while keeping the segments until ready to serve. 2. Mix the juice with the oil and salt. 3. Add avocado and onion to the dressing. 4. To serve, place the arugula in a very large bowl, then add the avocado and onion dressed on top. 5. Stir gently. |
