Nothing like a crisp fresh salad to start off a meal Ingredients:
4 cups coarsley chopped arugula or 4 cups spinach |
2 chopped tomatoes |
2 tablespoons olive oil |
1 tablespoon minced red onion |
2 teaspoons red wine vinegar |
2 teaspoons balsamic vinegar |
1 pinch salt |
1 pinch pepper |
Directions:
1. In salad bowl toss arugula or spinach with tomatoes. 2. In small bowl whisk together the olive oil, red onion, red wine vinegar, balsamic vinegar, salt and pepper. 3. Pour over salad and toss to coat. |
