Artichokes With Rice In Olive Oil

Great way to eat artichokes. Incredible recipe sure to please all.
Ingredients:
5 large artichokes
filling
5 teaspoons rice washed and drained
1 small white onion chopped
2 tablespoon dill chopped
1 tablespoon sugar
1/4 cup extra virgin olive oil
3/4 cup + 3/4 cup hot water
1 teaspoon salt
Directions:
1. Trim base of the stem of artichokes them break off all dark leaves.
2. Scoop out the light green leaves and choke with teaspoon and discard.
3. Rub with lemon.
4. Clean off the bottom part with a knife.
5. Leave trimmed artichoke in water and lemon juice mixture to prevent discoloring.
6. Saute onion with olive oil in a pot.
7. Add rice, salt and sugar then cook for 10 minutes over medium heat.
8. Pour 3/4 cup of hot water in it then stir and put the lid on.
9. Turn heat down to low and cook until rice is soft then add dill and toss.
10. Place artichokes in a shallow pan then fill them with the rice equally.
11. Pour 3/4 cup of hot water into the pan from the side and cover the lid.
12. Cook until artichokes are fork tender over medium low heat.
13. If necessary add little by little more hot water.
14. Arrange them on a service plate and pour the remaining half of the olive oil over.
15. Sprinkle some chopped dill on top.
16. Serve cold.
