My daughter has been known to eat three of these as her dinner and the rest of us are out of luck. They are HER celebratory meal of choice. Pressure cooking makes it a week night prep and we can have them lickety split. Ingredients:
4 fresh artichokes, (check for pale stem ends, dark brown indicates long storage and old artichokes) |
2 tablepoons of olive oil, best you can afford |
1 large clove of garlic |
1 small onion |
2 pinches of savory |
2 teaspoons of salt |
1 cup of good white wine |
dipping sauce |
1/4 cup of sour cream |
1/4 cup of mayonnaise |
1/2 of lemon juiced |
1 tablespoon of dijon mustard |
dash of worchestershire sauce |
a few grinds of fresh ground black pepper |
a smidgeon of grated raw onion, really only a tsp or so |
Directions:
1. Trim tops and peel stems from the artichokes. 2. Put in pressure cooker. 3. Sprinkle onion, olive oil, garlic, savory, salt and white wine over artichokes. 4. Cook in pressure cooker for 10 minutes. 5. Drizzle juices over the artichokes and serve. 6. Mix sauce ingredients and serve on the side for dipping if desired. 7. *********************************************** 8. Alternative dipping sauces: 9. Hot butter with a squeeze of anchovy paste and lemon juice! 10. Hot hollandaise sauce 11. Creamy horseradish sauce 12. Sherry vinaigrette with crumbled egg yolks over top. |
