Artichokes And Mashed Potatoes |

Makes a really different and eye appealing dish. I like to place some artichoke hearts around server and a few sprigs of cilantro and some fresh roasted red pepper strips in middle of top. Ingredients:
4 large idaho potatoes, peeled and quartered |
1 can artichoke hearts (non-marinated) i get the frozen ones and find they have an unadulterated flavor. |
3 t butter |
1/4 cup milk |
garlic if you wish (i always wish lol) |
salt & pepper to taste |
Directions:
1. Boil potatoes for 15-20 minutes or until potatoes are tender when pierced with a fork. 2. Drain. 3. In a large mixing bowl, pureƩ artichoke hearts with half the butter and milk, using a hand blender or mixer. 4. Add potatoes and remaining butter and milk (slowly) and mix until smooth. 5. Add salt and pepper to taste. |
