ARTICHOKE SUPREME SALAD DATED 1981 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Monte Estate in Plano, Texas in 1982. Tried and true. Ingredients:
2 tablespoons salad oil |
2 tablespoons white wine vinegar |
3/4 teaspoon dry mustard |
1/2 teaspoon oregano |
1/2 teaspoon basil |
1 clove garlic |
6 ounces artichokes |
4 ounces medium shell macaroni cooked |
1/2 small zucchini sliced thin |
1 large carrot shredded |
2 ounces salami cut in thin strips |
2 tablespoons grated parmesan cheese |
1 cup grated mozzarella cheese |
Directions:
1. Marinate oil, vinegar, mustard, oregano, basil, garlic and cut up artichokes. 2. Let sit for a few hours then mix with remaining ingredients. |
