Artichoke Stuffed Mushrooms |

These are always gone when I make them. They do good with a variety of crowds...from my friends to my parents friends, to bridal showers....they got requests at the shower! Ingredients:
1 lb mushrooms |
1 medium onion |
1 12oz jar marinated artichoke hearts |
1 8oz cream cheese, softened |
1 - 1/2 tbsp sour cream |
3/4 - 1 cup 5-cheese italian cheese blend (like kraft) |
1-1 1/2 tbsp parmesan cheese (optional) |
olive oil |
garlic salt (to taste) |
salt (to taste) |
pepper (to taste) |
Directions:
1. Chop mushoom and mushroom stems (reserve the caps for stuffing) Peel the caps 2. Sautee mushroom stems and onion until translucent in oilve oil, salt and pepper 3. Strain artichokes from oil and chop 4. Mix sauteed mixture, artichokes, cream cheese, sour cream, 5-cheese blend, parmeasan together in bowl 5. Add garlic salt (about 1/4-1/2 tsp), salt, and pepper to taste (if you over season, add more sour cream) 6. Stuff mushrooms caps 7. Springle with additional 5-cheese blend if desired 8. Spray glass dish or cookie sheet with Pam 9. Place in glass dish or on cookie sheet and bake at 350F for about 20 min or until filling starts to bubble |
