Quiche-like texture. Makes a large batch. Ingredients:
2 - 15 oz - cans artichoke hearts, drained |
6 tablespoons unsalted butter |
1/2 cup bread crumbs, fresh or dried |
2 medium onions, chopped |
9 beaten eggs |
1/4 teaspoon cayenne |
1/2 teaspoon oregano |
salt to taste |
1 lb sharp cheese, grated |
2 tablespoons minced parsley |
Directions:
1. Preheat oven to 350 degrees. Coarsely chop artichokes; place in large bowl; set aside. Melt butter in 10 inch skillet; mix approximately 2 tablespoons of melted butter with bread crumbs and reserve for topping. Saute onions in remaining butter until just cooked. Combine onions and the remaining ingredients with the artichokes; mix well. Pour into 2 quart oblong baking dish. Top with buttered bread crumbs and bake for 35 to 40 minutes. Let stand 10 minutes before cutting into small squares. |
