I bought the noodles at a natural foods gourmet store. Needing to make a party salad, the combo turned out great. Pale Green noodles, white cheese, dark green basil and cilantro, black olives made for a striking as well as delcious salad. Read more . No need for onions or tomatoes in this one! Ingredients:
1 box artichoke and spinach noodles cooked and drained |
1 small jar of marinated artichoke hearts.-save juice, chop artichokes |
1 small bunch of fresh basil chopped |
few tbs fresh chopped frsh cilanto |
1/4 cup pitted black olives sliced or to taste |
1/2 cup fresh mozarella balls, sliced into small pieces or to taste |
extrav virgin olive oil to taste and moisten |
1 clove garlic minced or to taste |
salt and pepper |
Directions:
1. Simply mix all gently together, serve room temp or chilled |
