This is a great side dish for a brunch or can be cut in smaller pieces for an appetizer Ingredients:
2 (6 ounce) jars marinated artichoke hearts, undrained |
1 onion, chopped |
1 clove garlic, minced |
4 large eggs, lightly beaten |
1/4 cup fine, dry bread crumbs |
1/2 teaspoon salt |
1/2 teaspoon dried oregano |
1/8 teaspoon pepper |
dash of hot sauce |
2 cups shredded sharp ceddar cheese |
Directions:
1. Drain artichoke hearts, reserving liquid from one jar. 2. Finely chop artichoke hearts, and set aside 3. Saute onion and garlic in reserved liquid in a large skillet over medium heat until tender. Set aside. 4. Combine eggs, breadcrumbs, salt, oregano, pepper, and hot sauce in a bowl, stirring with a wire whisk until blended. 5. Add chopped artichoke, onion mixture, and cheese: stir well. 6. Pour into a greased 11 x 7 baking dish. 7. Bake uncovered 325 degrees for 25-30 minutes or until set. 8. Cut into squares. |
