Tried and true estate sale recipe. I obtained this recipe from an estate sale in 1992. Since I am the world's great fan of artichokes and rice I had to make this one right away. It is now a regular in our home. Read more . Everyone loves it. Ingredients:
1-1/2 cups basmati rice |
4 large cloves garlic |
1/4 teaspoon olive oil |
1/8 teaspoon dried thyme |
1/8 teaspoon dried marjoram |
1/8 teaspoon basil |
3 cups water |
8 canned artichoke hearts |
Directions:
1. Rinse rice several times until rinse water runs clear. 2. Sauté garlic and herbs in olive oil until fragrant about two minutes. 3. Add rice and sauté another three minutes. 4. Add artichoke hearts and sauté another minute. 5. Add water and bring to a boil. 6. Cover then reduce heat and cook about fifteen minutes. 7. Turn off burner and let sit five more minutes. 8. Fluff with fork. |
